Pillow Cookies


Chocolate Chip Cookies + Brownies = Dessert Heaven, aka Pillow Cookies.
Recipe and picture from Bakerella. You need to see the steps but basically you put a brownie inside cookie dough and bake. They are huge and awesome.

Butterfinger Cake

Ingredients

Yellow cake mix
1 can sweetened condensed milk
1 jar caramel topping (I used chocolate instead, not a fan of caramel)
3-4 Butterfinger candy bars
Cool Whip

Directions
  1. Bake the cake mix according to the package.
  2. While hot - poke holes all over it. Mix together the sweet milk and caramel and pour over cake.
  3. Crush up the butterfingers and spread on top. Allow to cool and refrigerate.
  4. Once completely cool - top with cool whip.

Ravioli with Spinach and Bacon


Ingredients

1 pound ravioli (fresh or frozen)

6 slices bacon

2 tablespoons olive oil

2 cloves garlic, sliced

2 bunches fresh spinach, thick stems removed (about 8 cups)

kosher salt and black pepper

1 tablespoon fresh lemon juice

Directions

  1. Cook the ravioli according to the package directions. Drain and divide among bowls.
  2. Meanwhile, cook the bacon in a skillet over medium-high heat until crisp, 6 to 8 minutes; transfer to a paper towel–lined plate. Crumble.
  3. Wipe out the skillet and heat the oil over medium heat. Add the garlic and cook, stirring occasionally, until golden, 1 to 2 minutes. Add the spinach, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook, tossing, until just wilted, 1 to 2 minutes.
  4. Stir the bacon and lemon juice into the spinach. Spoon the mixture over the ravioli.

Apple Nachos

Apple Nachos Recipe Ingredients

1 Tablespoon water
30 large marshmallows
1/3 cup butter, cubed
4 medium tart apples
1/3 cup miniature semi-sweet chocolate chips
Sprinkles and Caramel ice cream topping

Directions

  1. Melt marshmallows and butter in a large saucepan. Arrange apple slices on a large platter. Drizzle with caramel, top with marshmallow mixture and sprinkle with chocolate chips and sprinkles. Serve immediately.

Veggie Quesadillas

Ingredients1 c. frozen corn
1 c. grated zucchini (juices squeezed out)
1/2 bunch cilantro, chopped
2 Tbsp. diced jalapeno (or more if you like it hot)
1 can black beans, drained and rinsed
1/2 tsp. salt
1/4 tsp. pepper
1-2 tsp. chili powder
1/2 tsp. cumin
2 c. Monterey Jack cheese, shredded
flour tortillas

Directions
  1. In a large bowl, combine all ingredients except for the cheese (and tortillas of course). Place mixture in a large skillet and fry until hot.
  2. In the meantime, heat a medium-sized skillet over medium heat. Place a tortilla in the pan. On half of the tortilla add a few large scoops of the corn/bean mixture and a little cheese. Fold tortilla over, then flip sides.
  3. When cheese is melted, cut in half and serve!

Baked Creamy Chicken Taquito


Ingredients
1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions

1 can of black beans
2 C shredded cooked chicken
1 C grated pepperjack cheese

small corn (or flour) tortillas
kosher salt
cooking spray
Directions
  1. Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
  2. Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
  3. Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or come unrolled right away, just try heating them longer and try the paper towel thing.
  4. Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges. Then roll it up as tight as you can. Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.
  5. Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

    Dip 'em in salsa, sour cream,
    guacamole, or this dressing.
Makes about 10-12 taquitos
