2 1/2 lbs of Sweet Potatoes
1/2 cup Sugar
1/2 cup Milk
1/4 cup butter, melted
2 eggs, beaten
1/4 cup flour
1/2 t salt
1/2 t vanilla
Topping
1/4 cup butter.melted
3/4 cup pecan or walnuts
3/4 cup brown sugar
1 t cinnamon
Directions
- cook unpeeled potatoes in a large kettle in water. bring to a boil, cook for 3-40 minutes until soft. Drain and cool. peel and cube.
- in a large bowl, mash potatoes, add rest of the ingredients. Pour into a greased baking dish.
- Combine the ingredients for the topping, sprinkle over the top of potatoes. Bake uncovered at 350 for 40-45 minutes, until golden brown.
