1 lb chicken breasts, cut up in thin strips
2 tablespoons fajita seasoning mix, divided
2 tablespoons oil, divided
8 oz uncooked penne pasta
1 each green, red, and yellow pepper, sliced
1 medium onion, sliced
1 16 oz jar salsa
1/2 cup water
1/4 cup shredded cheddar cheese
1 tablespoon minced fresh cilantro
Directions
- Sprinkle chicken with 1 tablespoon fajita seasoning. In large skillet over medium heat, cook chicken in 1 tablespoon oil for 6-8 minutes.
- Cook pasta according to package.
- Remove chicken, saute peppers and onion in 1 tablespoon of oil. Sprinkle with 1 tablespoon fajita seasoning. Stir until blended.
- Add salsa, water and chicken. Heat.
- Drain pasta, toss with chicken mixture.
- Sprinkle with cilantro and cheese.
