Ingredients
4 tablespoons Olive Oil
1 clove Garlic, finely chopped
2 lbs Zucchini
Salt & Pepper to taste
1 box Penne Pasta
1/2 cup Parmigiano cheese, grated
Directions
- Cut zucchini in small bite-size chunks. Season with salt and let drain for 1 hour.
- Saute garlic in oil for 1 minute.
- Add zucchini, season with pepper and slowly cook until completely cooked through, about 10 minutes.
- Cook pasta according to directions. Drain and toss with sauce. Stir in cheese before serving.
